Producing real olive oil is difficult. It requires expertise, knowledge, and love. The details begin with the growth of the olive tree—this determines the quality of the olive oil. The olive tree is long-lived, yet very sensitive; it can be affected by the climate conditions, altitude, and flora of the environment where it grows—even its proximity to the sea. That’s why olive oil obtained from different regions is distinct and truly unique.
The olives accepted by our facility do not come into contact with air during the pressing stage. As a result, the olive oil is rich in quality, free fatty acids, peroxide levels, and tri-linolein.

After the pressing process, olive oils are stored in cool and dry environments away from direct sunlight. Otherwise, peroxide and acid levels will increase, and the oil will be affected by air conditions.
